Boise native Lukas Volger sees meals laid out on the plate in a certain way. He says it comes from how he grew up. “Dinner was always some protein like a chicken breast or a pork chop or a steak, a couple sides and a glass of milk.”
But that kind of “plate geography” can be hard to replicate when it comes to vegetarian cooking. So Volger created a cookbook with vegetables at the heart of the dinner plate. It’s called “Vegetarian Entrees that Won’t Leave You Hungry.” He told Sadie Babits there’s a misperception that vegetarian meals won’t fill you up.
